Relocated from the center of Hida Takayama to Kiyomi, which is rich in nature and water. At the foot of the Hida Mountains, he handles sake brewing using high-quality water and rice, and his job is to create a yeast environment.
Hida Takayama is one of Japan's leading tourist cities that preserves the castle townscape and natural scenery of Satoyama. [Oita Sake Brewery] has been brewing sake in the center of the city since its founding in the Edo period. In search of richer nature and water, in 2 we moved to Kiyomi, about 30 minutes by car from Hida Takayama. At the foot of the Hida Mountains, we use underground water rich in minerals from the mountains to brew a refreshing and dry sake while facing the nature of Hida. The harsh winter environment, where temperatures drop to below -10 degrees Celsius, creates a crisp flavor.
The raw material used is Gifu Prefecture's representative sake rice, ``Hidahomare,'' with the philosophy of ``producing sake that the people of Hida can be proud of.'' The rice, which is grown in large grains by absorbing the blessings of Hida in fields filled with underground water from the Northern Alps, is characterized by a good balance of sweetness, spiciness, acidity, astringency, and bitterness.
Adding to the high quality water and rice is the craftsmanship and passion of the brewers. His job is to strive to improve the yeast environment, and he brews sake that expresses the magnificent nature of Hida.
The representative brand is ``Oni Koroshi,'' which is so spicy that it can even ward off demons and is loved by locals.
