Sake brewing brings out the potential contained in a single grain of rice

Asago City, Hyogo Prefecture is known for Takeda Castle, the castle in the sky. The founder of Tajimae Joint Venture Company came to Tajima from his hometown of Senshu and Izumi Province in search of water suitable for sake brewing. Sake brewing has been carried out using rice grown in a naturally rich land with hot summers and deep snow in winter, and water carefully stored in the mountains. With the belief that ``a single grain of rice has infinite power,'' we have aimed to bring out the flavor of each grain of rice.

In order to make the most of the charm of high-quality rice grown in Hyogo Prefecture, we developed a technique called aging. Most of the bamboo springs have been dormant for over two years, and are distinctive for their golden color. Filtration using activated carbon is suppressed so as not to impair the flavor and delicious acidity created by aging.
