Motai, Saku City, Nagano Prefecture, is sandwiched between two mountains, Mt. Asama to the north and Mt. Tateshina to the south, and has been known as a rice-producing region since ancient times. In this area, there is Motai-juku, a post town that retains the atmosphere of the old Nakasendo, and was also called Ai-no-shuku because it was a resting place without an inn.
Among the rows of houses along the winding road lined with large and small storehouses, there stands a building that stands out with its beautiful white walls and stately style. Founded in 1689 (Genroku 2), Osawa Sake Brewery is a sake brewery run by the Osawa family, who served as the feudal lords of Motai for many generations. Many types of sake have been brewed using the rich underground water of Mt. Tateshina, including ``Oyoshino,'' ``Zenkoji Treasure Sake,'' ``Shinano Kataribe,'' and ``Seki.''
In 1989 (Heisei 1993), the brewery, which has a guiding principle of ``Wajyo Ryoshu,'' which means ``harmony among people produces good sake,'' announced through trial and error a new brand, ``Meikyo Shisui.'' This sake immediately attracted attention for its clear flavor and translucent taste, as the sake name expresses ``a clear state of mind free of evil thoughts, like an unclouded mirror or the still surface of water.''
