Yunotsumachi, Ota City, Shimane Prefecture, is located near the World Heritage Site, Iwami Ginzan Silver Mine. Located in the mountains on the Sea of Japan side, this area has long been known as a hot spring town. Wakabayashi Sake Brewery began producing sake here in 1869 (Meiji 2). The aged copper signboard on the Sekishu tile roof tells the story of its history. Currently, Kunihiro Wakabayashi is the fifth generation brewer.For sake brewing, they use Iwashimizu, which springs from a mountain 4 kilometers away from the brewery. The rice used is mainly ``Yamada Nishiki'' produced within the prefecture and ``Omachi'' produced in Okayama Prefecture, as well as rice suitable for sake brewing such as ``Kamimai'' and ``Saka Nishiki'' developed in Shimane Prefecture. Through careful preparation using traditional tools such as koshiki and koji boxes, we aim to make sake that fully brings out the natural flavor of the rice.
Wakabayashi Sake Brewery also specializes in making Kimoto. Kimoto-zukuri is a traditional brewing method that uses natural lactic acid bacteria. It is said that the strong yeast that has survived the battle against invisible microorganisms produces a rich, rich flavor.The name ``Kaishun On'', which is brewed using Kimoto-zukuri, comes from the fact that one night, the Buddha appeared to the wife of the third generation sake brewer in her dream pillow and bestowed the character ``On'' on her. Since that incident, it has become a word of honor for Wakabayashi Sake Brewery. Two generations later, in 3, the company revived sake brewing using wooden barrels that had not been used for a long time. The sake made there was named ``O''. These words are posted throughout the brewery and store, and are also printed in small print on all sake bottles. This character means "joy, enjoy". In response to this, the brewery's credo is to pursue sake that people, not everyone, find delicious!
