Nakajima Brewery continues to boldly challenge new frontiers in sake

Nakajima Brewery was founded in Mizunami, Gifu during the Genroku period and has been loved by locals for many years for its "Shiroku" brand. In 2000, they launched a new brand, "Kozaemon." They also focus on sake rice, cultivating locally grown sake rice and using a wide variety of carefully selected rice suitable for sake brewing to brew a variety of types of sake.

A variety of flavors that embody the possibilities of sake

Founded in Mizunami, Gifu during the Genroku period, the brewery has long been loved locally for its "Shiroku" brand, but from the end of the 1900s, it began to take on initiatives that were ahead of its time, such as aging sake and using paintings by Paul Klee on its labels.

In 2000, they launched a new brand called "Kozaemon." They also focus on sake rice, cultivating locally grown sake rice, and brew a variety of types of sake using a wide range of carefully selected rice suitable for sake brewing.

Nakajima Brewery is known for its traditional Kimoto sake brewing, Saishikomi Kijoshu sake, and direct-draw sake brewing using special equipment, and the wide variety of authentic sake available is a major attraction of the brewery. Its capabilities are recognized globally, as evidenced by the fact that the brewery does business with over 40 countries overseas.

A new brewery was installed in 2018 to allow for seasonal brewing. Cafe Shiroku and Ristorante Solo, which will open in spring 2024, are spaces that even non-alcohol drinkers can enjoy, offering local ingredients along with a menu unique to the brewery.
This is a brewery whose future evolution is sure to be exciting.
