Ishizuchi Sake Brewery
The brewery is located at the foot of Mt. Ishizuchi in Saijo City, Ehime Prefecture, and sake production is centered around the brewer's family. Using ultra-soft water from the Ishizuchi Mountains as the brewing water, the aim is to create a sake that gets better the more you drink it.
Ishizuchi Sake Brewery is located in Saijo City, Ehime Prefecture, at the foot of Mt. Ishizuchi, the highest peak in western Japan, and is a family-oriented sake brewery. It has long been known as a town of famous water, and the water that flows continuously from the Ishizuchi Mountains has a track record of being ranked number one in Japan for two years in a row at the National Delicious Water Awards.
The water used for preparation is ultra-soft water from the Ishizuchi Mountains that gushes out from a well within the brewery. Ishizuchi's characteristic velvety softness, refreshing taste, and clean, clear aroma probably come from this water.
Aiming to produce even better-tasting sake, we wash and soak the rice after analyzing past data on the crop and properties of the raw rice for that year. We are particular about making koji, and we take our time using the Tarai koji method to develop koji that will work until the latter half of the mash. Even after making the moromi, a delicate and careful sense of manual labor is used in all steps, such as long-term low-temperature fermentation with careful attention to the appearance, taste, and aroma of the moromi.
Focusing on Junmai Sake and Junmai Ginjo Sake, our goal is to make sake that comes alive during meals. We want you to try this sake, which has a clean, acidic taste that gets better the more you drink it.
