A new brand, ``Amafuri,'' is brewed using underground water brought from the sacred mountain Mt. Daisen. While valuing traditional techniques, they also try new manufacturing methods, such as making sake with low-polishing rice.
Even on sunny days at the foot of the mountain, the summit is covered in mist and mist, making Tanzawa Daisen also known as Afuriyama. [Yoshikawa Brewery] has a brewery located in Kobe, Isehara City, surrounded by the fantastic mountain greenery, and has a history of over 100 years.
It is said that ``water is a gift'' because it takes about 50 times the weight of rice to make sake, and regions with rainfall are blessed with abundant water sources. [Yoshikawa Brewing] uses underground water brought from the sacred Mt. Daisen. While most sake is made from soft water, the water that comes out of the well is hard water with a hardness of 150, which is rare in Japan. The hard water rich in minerals creates a refreshing and refined quality of sake, giving the drinker a dignified impression.
While valuing time-consuming traditional techniques such as making Kimoto and Mizumoto, we also try new manufacturing methods, such as aiming for delicious sake with low polishing and no unpleasant taste. In 2021, we will be launching a new brand, ``Amaori,'' with the concept of ``a drink that will be loved by young people who have never drank sake before, as well as people overseas.''
