Maruhiko Sake Brewery
[Maruhiko Sake Brewery] is located in Kawashima, Yokkaichi City, at the foot of the Suzuka Mountains on the border between Shiga and Mie prefectures. We use the abundant medium-hard water that springs up from underground and Yamada Nishiki rice, which has been polished to over 60%, to brew a fruity, mild sake.
It was founded in 1867 as Suzuki Sake Brewery, and was renamed Maruhiko Sake Brewery in the early Showa period, after Masamune Maruhiko, the brewer. After the war, Hama Musume, which won the first prize at the Mie Prefecture Sake Fair, began to be shipped to the Kanto region and became famous throughout the country.
With the beginning of the Heisei era, lifestyles changed and there was a shift away from Japanese sake, but we returned to the roots of sake brewing with the idea of ``producing sake that is delicious and pleasing to many people, regardless of age or gender.'' Completed "Kanbai". It is a new-age sake that eliminates the smell of alcohol and has a fruity, mild, clear and sophisticated taste that goes well with both Japanese and Western food.
In addition to being produced in Hyogo Prefecture, we use Yamada Nishiki rice produced by contracted farmers in the Iga region of the prefecture, and the rice is polished to over 60%. The mild quality of the sake comes from the use of medium-hard water from the Suzuka Mountains, which is low in iron and calcium, as the brewing water.
The basic idea is to take the time and effort to put in the effort, and to build with integrity. Led by a young chief brewer in his 40s, he continues to strive for beautiful sake that fits modern eating habits.
