Kawai Sake Brewery
Kawai Sake Brewery is the only existing sake brewery in Imai-cho, which retains the townscape of the Edo period. You can feel the deep history in the wide range of flavors.
Imai Town, located in Kashihara City, Nara Prefecture, and surrounded by the Yamato Sanzan Mountains, has flourished as a commercial city since the end of the Sengoku period, and still retains its medieval townscape. Kawai Sake Brewery is the only sake brewery in existence in this historic town. It is said that he was running a sake brewing business in 1772 (Meiwa 9). Currently, the 16th generation brewer is leading the brewery as the chief brewer. Based on the motto of ``brewing sake that conveys your feelings'', they carefully produce small quantities using traditional techniques.
``Shusse Otoko'' is a brand loved by locals because of its auspicious name. The representative honjozo genshu has the body and fullness that is unique to genshu, and has an alcohol content of 18%. If you lightly grill persimmon leaf sushi, a local specialty loved by connoisseurs, as a side dish, your cup will be empty before you know it. In addition, the gorgeous Daiginjo and the refreshing Junmai sake are also popular, and you can feel the deep history in the wide range of flavors.
The main building, the Kawai family residence, is designated as a national important cultural property. Outside of the brewing season, an exhibition room in a part of the brewery is open to the public. When you visit for sightseeing, you will want to experience the history and culture of the warehouse and take the ``Shusse Otoko'' as a souvenir.
