Miyako Nishiki Sake Brewery was founded in 17 in an area formerly known as Tsunomura in Naka, Iwami. The brewery values the chemistry that comes from healthy microbial life and the dynamism of nature.

The sake is brewed in winter in Miyakono Village, Naka, Iwami, and pressed in the spring. It matures over the summer, and in autumn, when it is at its most flavorful, the trees of Mt. Takatsuno (Mt. Takatsuno) and the surrounding mountains turn red, creating a beautiful brocade look. This is why the brewery was named "Miyako Nishiki" (Miyako Nishiki).
The site where the brewery is located is said to have been the bottom of the sea in ancient times. With this history and rich soil, the brewery uses "Kinsai-sui" water, which is rich in a variety of minerals and is drawn from a well on its premises, as its raw water.
The motto of the sake brewing industry, which takes place in an area with an abundant water source where the Gono River, the largest river basin in the Chugoku region, meets the Sea of Japan, is "natural and simple." By valuing the soil, microorganisms, and local climate, the company aims to create sake that conveys the dynamism of nature beyond taste and flavor.
Making the most of the rich soil and natural blessings that have been passed down in this area for generations, most of their sake is made using organically grown, pesticide-free rice from Shimane Prefecture, with a commitment to using 100% rice ingredients.
He also focuses on drawing out the power of fermentation, the work of microorganisms. The true joy of fermentation is that even the faint noises and fluctuations become flavorful, becoming an emotional element in sake that goes beyond the expression of flavor.
