INDEX
Katano, Osaka, is located on the border between Osaka, Kyoto, and Nara prefectures. The Amano River flows through the center of the city, and it is also the origin of the Japanese Tanabata legend. Yamano Sake Brewery was founded at the end of the Edo period, when many sake brewers were born in the area. Their representative brand, Katano Sakura, is named after the fact that Katano was a beloved hunting ground for Emperor Kanmu and Heian aristocrats during the Heian period, and was such a famous cherry blossom spot that it was even called "cherry blossom hunting." This sake is carefully brewed to cherish the beautiful and graceful cherry blossoms of ancient times.
The brewing methods have remained unchanged since the company was founded, and the company's belief is to deliver sake in the "best condition." Yamano Shuzo has a rich product lineup, and they value the uniqueness of each sake. In order to bring out the best in each product, the brewers, brewers, and employees work together as a team to ensure that everything from ingredients and the brewing process to storage, bottling, product management, and shipping is done in perfect harmony.
They are particular about the quality of their sake, and about 9% of their total production is designated name sake, of which 4% is "genshu." While low alcohol is becoming the trend, they dare to value strong genshu.
Using the abundant underground water of the Ikoma Mountains and high-quality sake rice from the local Kansai region as ingredients, they demonstrate their sake brewing techniques by taking advantage of the local climate. In addition to the Yamahai and Sokujo methods, they have also started making Kimoto yeast from the Reiwa era.
Although it is a small brewery with a small number of stones, it offers a wide range of products that make the most of the individuality of each brewing method. As of 6, it has won 10 gold medals at the National New Sake Tasting Competition, and its techniques are recognized as reliable.
Yamano Sake Brewery also produces sake with strong regional characteristics rooted in local history, such as "Orihime no Sato" named after the place of the Japanese Tanabata legend. While fulfilling its role as one of the precious sake breweries still existing in the region, it will continue to convey the charm of Katano and its delicious sake both domestically and internationally.
