INDEX
Gyokusendo Sake Brewery was founded over 200 years ago in Yoro, Gifu Prefecture. This blessed location produces not just good sake, but delicious sake that is truly acclaimed.
Since 1934, they have been brewing sake while preserving history and tradition, and taking on new challenges. They are expanding their specialty brewing to include not only sake, but also shochu, whiskey, liqueurs, and mirin.
In the Heisei era, they have striven to innovate in order to keep up with the times, such as by introducing a bottled sake pasteurization device and an MJP rice polishing machine. Their flexible thinking and challenging spirit, which combines traditional techniques with scientific data, is directly linked to the quality of their sake, and they have been regular recipients of the gold medal at the National New Sake Tasting Competition since 1986.
The aim is to create a sophisticated and elegant sake, one that is not muddy, has a sense of ease in itself, and leaves a lingering aftertaste that can be enjoyed after drinking.
They use carefully selected rice suitable for sake brewing and ultra-soft water for brewing, polish the rice themselves to the perfect finish, wash the rice with a high-quality air-water jet, make koji using both the traditional koji kiln method and a mechanized koji-making machine, and bottle at the optimum temperature. They aim to make delicate and flawless sake by making full use of both mechanized and manual processes.
As proof of this, their representative brand "Reisen" is a limited edition product brewed in small quantities using the most luxurious ingredients and manufacturing methods. "Minogiku" is also available in a wide range of quality and is loved not only locally but also widely in the Kanto region.
Despite their long history, the company never rests on their laurels and keeps a challenging spirit as they work together to make sake. Gyokusendo Sake Brewery continues to take on the challenge of creating the sake they truly desire.
