Sake is brewed in Kakamigahara, Gifu Prefecture with the aim of producing ``warm sake'' that brings out the flavor of rice. ``Nagaragawa'' is made by fermenting koji mold and yeast by listening to natural music, and it has a deep flavor that relaxes you when you drink it.

Founded in 27 in Kakamigahara, located at the northern end of the Nobi Plain. We have focused on the tradition of complete fermentation, aiming to create a ``relaxing umami sake'' that brings out the flavor of the rice.

The water used for preparation is underground water from the Nagara River, a clear stream that flows underground. Soft water with strong fermentation power gives a soft and smooth aftertaste. The main sake rice used is Hida Homare, which was born in Gifu, as well as local sake rice and Yamada Nishiki from Okayama Prefecture. ``Hida Homare,'' grown in rice fields using underground water flowing from the mountains of the Northern Alps, is characterized by its large grains, low protein content, and a good balance of sweetness, spiciness, acidity, astringency, and bitterness.

Another important element in making delicious sake is natural music. The natural environmental music that echoes throughout the year in the brewery brings out alpha and theta brain waves, giving creatures a sense of relaxation and healing. With the belief that "Sake is not made by humans, but by living things," we bring out the maximum flavor by creating a fermentation environment for useful microorganisms such as koji mold and yeast as close to natural conditions as possible, and promoting fermentation. is.
