Kato City, Hyogo Prefecture, is known as the hometown of Yamada-nishiki in the northern part of Harima. It is a region that is home to many Grand Crus, many of which are designated as Special A class, the highest rank in the production area rankings. Since its founding in 1893, Kamiyui Sake Brewery has been brewing delicious, high-quality sake as the only sake brewery in Kato City, winning gold medals many times at the National New Sake Tasting Competition and other events.
The reason why Yamada-nishiki is called the king of sake rice is that it is large in size, has a white core that absorbs water easily, making it easy for koji mold to enter the rice, and has a low protein content that can lead to unpleasant flavors in sake. At Kamimusubi Sake Brewery, they use a generous amount of Yamada-nishiki rice, and work carefully to bring out its charm to the fullest.
They use soft water pumped from their own well for brewing, and offer a wide variety of products, from full-bodied, umami-filled mellow types to light, refreshing types. All of their brands are easy to drink, so even people who are not familiar with sake can easily drink them.
The unique texture of Kamiyui is created using the microorganisms that have been cultivated in the brewery over a long period of time and the traditional techniques passed down from the highly skilled master brewers.
