Hatsumomiji, a long-established sake brewery in Yamaguchi Prefecture, was founded 205 years ago in 1819 (Bunsei 2). It is a four-season brewery that produces sake all year round using only sake rice grown in Yamaguchi Prefecture.

Returning to the roots of sake brewing after a temporary hiatus

Hatsumomiji was founded in 1819, during the late Edo period, in the downtown area of ​​Shunan City. The company name comes from the Japanese poem "Hatsumomiji," which likens the slight blush on one's cheeks after drinking sake to the coloring of autumn leaves. "Hatsumomiji" is also the name of a sake that was once a standard product.

Although the brewery has been in business for over 200 years, it has not always had a smooth sailing history. In 1985, due to the sluggish demand for sake at the time, the brewery temporarily stopped brewing and focused on selling sake. Sake brewing was suspended for 20 years.

In 2005, sake brewing was restarted by the XNUMXth generation brewer. A sake named after the brewery, "Harada," was born, with the meaning of returning to the origins. "Harada," which is a sake brewery with such a long history, is now their flagship brand, and is imbued with their desire to cherish the connection to their ancestors.

With the catchphrase "You can drink the seasons of Japan," Hatsumomiji is made entirely as pure rice sake, with the desire to make sake that fully brings out the flavor of rice. The aim is to make sake that allows you to enjoy not only the sake itself, but also the seasons that are reflected in the sake.

All the rice used in the sake brewing is from Yamaguchi Prefecture. They pursue pure rice sake made with local ingredients. "Harada" is made from Yamaguchi Prefecture's original sake rice "Saito no Shizuku", the best sake rice "Yamada Nishiki", and "Ise Hikari" and "Omachi", which are considered "mythical rice".

They also insist on using locally produced water, drawing spring water from Shikano every time they brew. With their roots in the Yamaguchi region, Harada has become one of Shunan's leading local sakes.

"Te, Saku" is a new brand to support young people

With the desire to "deliver the taste of freshly pressed sake at any time," they practice four-season brewing, brewing sake all year round. They also produce one seasonal sake for each season: new sake in spring, low-alcohol sake in summer, chilled sake in autumn, and cloudy sake in winter.

They have also launched a new brand called "Te, Saku" to pass on the history and traditions of sake brewing to the younger generation and to allow young people to enjoy Japanese sake. Having overcome difficult times, they are supporting new challenges and focusing on nurturing the next generation and fostering a Japanese sake culture.

Hatsumomiji is a local sake brewery that continues to put in the effort to make sake that allows you to enjoy the changing seasons. New innovations and challenges based on history and tradition will continue in the future.
