Tentaka Shuzo is located in Otawara City, Tochigi Prefecture, at the southern end of the Nasu Highlands, which spreads across the northern part of the prefecture. It is a lush rural area sandwiched between the Naka River and the Houki River. Deeply rooted in this area, where rice cultivation has been thriving since ancient times, Tentaka Shuzo has been making "rice sake only" since before the term "junmai sake" was coined.
In 2005, they became an organically certified business, began growing organic rice together with local farmers, and started brewing organic sake. They later obtained organic certification in the US and EU, and in 2017, they achieved the feat of winning a gold medal at the National New Sake Tasting Competition as Japan's first organic sake. Their quality has also been highly praised in competitions around the world.
In 2018, he established Tentaka Organic Farm Co., Ltd., a company that specializes in organic farmland ownership. He began producing organic rice on abandoned farmland, and continues to take on new challenges in organic farming and sake brewing while preserving traditions.
Guided by the idea of "Shindo Fuji," which says that the "body" and the "soil" are one, they continue to brew organic sake from high-quality soil and water. They place importance on environmental protection and sustainable agriculture, and while meeting organic standards throughout the entire brewing process, they are also dedicated to pursuing delicious sake.
The brewers themselves are involved in rice cultivation and understand the characteristics of each rice field, which allows them to polish and grow all of the rice in-house, allowing them to brew sake that is tailored to the characteristics of each rice field.
The water used is groundwater from the Nasu mountain range, pumped up from an unlined well in the brewery, ensuring stable quality throughout the year. For over 50 years, the water has been purified before being returned to the river after use, and the brewery is always mindful of the environment.
In addition, the company strives to reduce its environmental impact in every way possible, including reusing bottles, adopting recyclable piping, and making effective use of residual heat generated during the brewing process.
