Oonagawa Co., Ltd. | Akita Prefecture
Onogawa Co., Ltd.
Oonogawa Co., Ltd. is located in Omori-machi, Yokote City, which is one of the snowiest areas in Akita. This small sake brewery almost disappeared from the town, but the sake brewed with the "big" sincerity of the brewers intoxicates the hearts of those who drink it.
INDEX
The company was founded in 3 under the name Bizen Shuzo Honten in Omorimachi, Yokote City, Akita Prefecture. In 1914, when the company fell into financial difficulties, Bungo Tanaka (current CEO), a former employee of a major beer company with ample experience in managing a sake brewery, took over the business and reborn it as the current Dainagawa Co., Ltd.
Sake brewing has had a deep connection with Shinto rituals since ancient times. Omori-machi is a town located at the foot of the sacred mountain, Mt. Horoha. The Shinto ritual "Shimotsuki Kagura" that prays for a good harvest on Mt. Horoha is designated as an Important Intangible Folk Cultural Property of Japan. Sake from the Oonagawa River is brewed with the pure water of the land where the gods dance.
Oonogawa Co., Ltd. has revived sake brewing with only five brewers. Led by Bungo Tanaka, nicknamed "BIG BOSS," each brewer brews sake with a "BIG" feeling. To keep the light of the brewery alive in the town, to meet the expectations of those who support us, and to hear the words "delicious." The trustworthy brewers work together to make sake every day. Oonogawa's heartfelt sake is not just a drink that gets you drunk, but one that "intoxicates the soul" of the drinker.
After taking over the business, all of the sake was unified to "junmai brewing". The sake brewing, which is carried out under the direction of Sato Yoshinao, a traditional Yamauchi Toji (master brewer) originating from Yokote City, expresses different concepts depending on the brand. "Oonogawa", which bears the trade name, is brewed using the Akita-style cold fermentation method, which takes advantage of the local climate and involves long-term low-temperature fermentation. "Oonogawa Tenka", which is inspired by snowflakes dancing in the clear northern skies, is a series of unfiltered raw sake that allows you to enjoy the rich individuality of the rice and yeast used. In addition, "Yamauchi Toji" is the only brand in the prefecture that can use the "Yamauchi Toji" trademark, and is characterized by its sharp taste.
The brewery has two types of yeast that are used in-house, and most of the sake is made using this yeast. The brewery stores all of the finished sake in bottles to maintain the quality of the sake.
After the brewery was reborn, Oonogawa established its position in just five years and continues to strive to achieve this. They have released products such as "Omori", a limited edition sake stored in barrels, and "Moega", the debut product of Suzuki's assistant brewer and a sake made using the techniques of his mentor, the late Moriya Koichi, the famous brewer of "Amanoto". They also have a brewery cafe that promotes the local attractions and a sake brewing tour that is open to the public, and they are radiating energy that not only creates sake but also people and the town. They are a reliable presence that makes people think, "Oh, Omori has Oonogawa."
