Located in the southern part of Yamagata Prefecture, Yonezawa City is blessed with a history as the castle town of the Uesugi clan and snowy nature. Kosaka Sake Brewery has been making sake in the traditional way since the Taisho era, taking advantage of the location of Yonezawa.

Yonezawa is the birthplace of the Sengoku warlord Date Masamune, and during the Edo period, it flourished as the "Uesugi castle town" when Uesugi Kagekatsu, the second head of the Uesugi clan whose ancestor was Uesugi Kenshin, ruled as its first feudal lord. Kosaka Sake Brewery dates back to 2, when the previous generation opened a sake brewery here together with a textile machinery manufacturer.
This sake brewery, symbolized by a round brick chimney that is rare nationwide, has been brewing sake since its founding. In winter, temperatures drop to minus 10 degrees Celsius and the brewery is covered in heavy snow, but the brewery's strict manual temperature control and cold brewing, taking advantage of the geographical location, produce delicious sake that is unique to this region.
The current head of the family is the fifth generation. In Yonezawa, an area surrounded by mountains, the clear air and pure water, along with the careful techniques of the brewers, continue to brew one-of-a-kind sake.
The defining feature of Kosaka Sake Brewery is their commitment to handmade production. From washing the rice with their bare hands to sticking labels on the bottles, every process is carried out painstakingly by hand by craftsmen. Their policy of not relying on machines is possible because they are confident in all the elements involved in sake brewing, such as the climate, air, rice, water, and technology, and because they have a strong passion for each and every bottle.
Their representative brand, "Koubai," is a refreshing, dry sake. It is a sake that waits patiently for the snow to melt, dreaming of the warmth of spring amid the harsh winter. And when spring arrives, it brings to mind the refreshing, fragrant blooming of plum blossoms. It is an uncompromising sake that is produced by the advantage of being in a snowy country with extreme cold, and by thorough handcrafting backed by skilled craftsmanship.
While continuing to brew sake according to the Edo-period diagrams even in the Reiwa era, they do not forget their spirit of challenge, such as developing new technologies and products. They are exploring the wide range of possibilities for sake, such as wine-type sake, extra-dry undiluted sake, and frozen-stored sake. More than a century has passed since their founding in 1923, and Kosaka Sake Brewery will continue to promote sake that can only be brewed in Yonezawa.
