Phantom Brewery "LINNÉ" aims to establish a brewery in Kyoto
Linné Co., Ltd., whose philosophy is to expand the diversity of food culture by incorporating a wide variety of ingredients and uniquely Japanese concepts, has brewed three new alcoholic beverages under its first brand, "800 (Yao)," using sake-based ingredients such as barley, buckwheat, and rice: "800 Yao Barley," "800 Yao Soba," and "800 Yao Kome."
In 2025, the company is currently working as Phantom Brewery (a brewery without facilities), brewing sake at breweries across the country while also preparing to open its own brewery in Kyoto.

Representative Director Shoya Imai is a co-founder of WAKAZE Inc., a sake startup based in Japan, France and the US, and served as the chief brewer, the person ultimately responsible for sake brewing.
During his time there, he created the world's first predecessor to "craft sake," and as the first master brewer at Sangenjaya Brewery (now closed), which was founded in 2018, he established the foundation for today's craft sake brewing technology.
In 2019, he moved to France and founded a brewery on the outskirts of Paris. In 2023, he played a leading role in "making Japanese sake a global drink" through technological development in Kyoto and California, USA. After that, he left his job in March 2024 and founded Linné Co., Ltd. in April, driven by his desire to "unleash the unknown potential of koji" from Japan to the world once again.

LINNÉ's first brewed brand, "800," is based on the concept of "brewing something different," and is centered around "cross-botanical" brewing, which combines multiple plant-derived ingredients. The name comes from the number 800 (= the number of things), such as the 8 million gods.
The first product of the "800" series, "800 Barley," was brewed with beer barley koji donated by the craft beer brewery "COEDO BREWERY" in Kawagoe, Saitama Prefecture, and Fukushima rice at the craft sake brewery "haccoba" in Minamisoma, Fukushima Prefecture.
Since the second series, "800 Soba" and "800 Rice" have also been sold in earnest.
