INDEX
1. What is Sake Matsuri Singapore?
In recent years, sake has become increasingly popular around the world.
Singapore is one such country, with the value of sake exported to Singapore continuing to increase by 2022% year-on-year, reaching approximately 23 billion yen in 129.
In 2023, overall export value and quantity were lower than the previous year, but the unit price exceeded 2 yen/liter, second only to China.
Additionally, the Japanese sake festival “Sake Matsuri Singapore” started in 2018.
The scale has expanded year by year, and for this 8th Edition, a trade fair for industry participants was held on May 5th, and a retail fair for general guests was held over two days on May 10th and 5th, with approximately 11 people attending. I came to the show.
2. Event details
About 1 exhibitors, including Japanese companies and Singaporean companies, gathered at the venue, the F20 Pit Building.
Each booth has a lineup of 54 brands, including brands that are not available in Singapore and brands that are popular in Japan.
As soon as the event starts at 11 a.m., a wave of people rush in to enjoy wine tasting at each booth with a glass of wine in hand.
There was a wide range of people including locals, Japanese people living in Singapore, people in the food and beverage industry, and tourists.
What surprised me was how much knowledge the locals had about sake. There was a high level of interest and interest in sake, with many asking questions about specific names and rice production areas.
One visitor commented, ``It's a good opportunity to sample as much as possible and find sake that you can't buy in Singapore and tastes you like.''
On the way home, many people were seen purchasing the sake they liked from the tasting.
3. Assemblage club participates for the first time
This time, we will introduce a sake assemblage from Kyoto [Assemblage Club] has landed in Singapore for the first time.
This is a new type of sake created by three long-established sake breweries in Kyoto (Masuda Tokubei Shoten, Kitagawa Honke, and Matsui Sake Brewery) that go beyond the sake breweries. We carefully select from a large number of assemblages (mixtures/combinations) and challenge ourselves to create new flavors under the theme of "Japanese sake x gourmet food from around the world."
What is “assemblage”?
A traditional technique that has been used since ancient times to make wines such as Bordeaux and Champagne. It is becoming popular in the Japanese sake industry as it is believed that mixing multiple types of unprocessed sake can create a deliciousness that cannot be achieved with either one alone.
“Assemblage Club 01 CODE NAME: Taro′”
We recommend chilling it in the refrigerator before drinking. It is characterized by its light sweetness and acidity, making it easy to drink. The aged aged sake added as a secret ingredient sharpens the flavor profile, resulting in a surprisingly refreshing drink. The moment it reaches body temperature in your mouth, it loses its character, and the flavor blends with the juices of the Wagyu beef.
The balance of sweetness, spiciness, bitterness, sourness, and umami is controlled and blended, and the real pleasure of assemblage is that it allows you to design complex flavors that overturn the conventional wisdom of sake.
The keywords of Kyoto sake and the novelty of the blend attracted many people who tried it.
``This is the first time I've heard of blended sake. It's interesting. The flavor and fruit-like sweetness of sake wraps around your mouth. This is delicious.''I was able to hear their thoughts.
More than 100 bottles prepared were sold out.
In the survey, 80% of respondents said it was more delicious, sweet, and fresh.
``This is the first time I've ever heard that such an elegant taste can be created by blending alcoholic beverages.I think the sweet and mellow taste will be well-received in Singapore as well.''It has been well received by buyers.
4.Rediscover the value of sake
When asked about the purpose of coming to the event, many said they were looking for a new drink to go with their meal. One of the reasons why sake is so popular in Singapore is that a large portion of the cost is spent on food.
An increasing number of local liquor stores and restaurants are also selling sake, and pairing of sake with non-Japanese cuisine is also attracting attention.
I feel that the Japanese sake market is expanding more and more, with people wanting to enjoy it not only with alcohol but also with food.
This time, we exhibited for the first time “[Assemblage Club] creates new value for sake through blending.
In Singapore, where many ethnic groups coexist, the sake that mixes together may be a sake with an eye on the world.
