It is made using 100% Yamada Nishiki rice grown with minimal pesticides and chemical fertilizers by the National Agriculture Agency in the Fujita area of Okayama Prefecture, and is carefully brewed with Kyoto's famous "Fushimizu" water. It is a pure rice sake with a refined aroma and a wide range of flavors, and is refreshing and delicious, so you will never tire of drinking it.
The "six" in the name has been used since ancient times in such expressions as "Rokuho" and "Rokudai," which refer to nature or the world, and "Rokutoku" and "Rokuho," which represent providence or law, and can be said to be a number that is neither too much nor too little and is harmonious. Hirase Sake Brewery has been in the town of Takayama since it flourished as a merchant town, and has been part of the town's history. They use mellow underground water from the Northern Alps and sake rice grown in Hida to make their sake.
Hida No Karakan Tokubetsu Honjozo won the highest gold award in the Value Hot Sake category at the 2024 National Warm Sake Contest. It has been highly praised for its matured aroma reminiscent of sourness, fullness, umami, moderate maturity, and good balance. It is a sake that is meant to be enjoyed warm, but can also be enjoyed at room temperature. It is recommended to drink it with simmered dishes or grilled fish.

"Oku no Matsu 20XX Vintage 2008" is a Junmai Ginjo unpasteurized sake brewed in 2008. It has a refreshing Ginjo aroma, a savory taste, and a crisp aftertaste, making it a slightly dry sake that has all three qualities.
