"Oonogawa Junmai Daiginjo Genshu" made with 100% "Akita Sake Komachi" (Oonogawa Co., Ltd. / Akita Prefecture)

Founded in 1914, Oonogawa is located in Omori-cho, Yokote City, at the foot of Mount Horoha in the northwest of the Yokote Basin, the home of the ancient Shimotsuki Kagura dance. Yokote is a town that receives particularly heavy snowfall in the snowy country of Akita. The climate and culture of the people who live here, including the famous "kamakura" snow huts, have been nurtured by the snow. "We want to brew sake that not only gets you drunk but also intoxicates your soul," says Oonogawa, who brews his sake with care, in keeping with the local air and atmosphere of the brewery. He uses pure water from the Dewa Hills, which is suitable for sake brewing, for the preparation of his sake, and brews it in the traditional Akita style cold preparation method by Toji Yamauchi.

"Oonogawa Junmai Daiginjo Genshu" is made with 35% "Akita Sake Komachi" sake rice grown by Shimokurose Farm in Yuwa, Akita City, with 100% polishing. This Junmai Daiginjo Genshu is brewed delicately and carefully by hand. Its taste is full of elegance and gentleness, making it a masterpiece that will put a smile on your face. It has a gorgeous aroma, a gentle mouthfeel, a rich flavor, and a clean, crisp aftertaste.

150th anniversary of our founding! 32-year-old aged sake "Shinyuho"

Founded in 8, Eau de Vie Shonai's history dates back to the Edo period, when the company was engaged in the koji (malt) business, which produced miso and soy sauce. Utilizing the techniques of that time, they established a sake brewery in 1875 and began producing sake. This led to the creation of Kiyomizugawa, a brand that remains a representative brand to this day. Located on the shores of the Sea of ​​Japan, where the cold winds blow, underground water from Mt. Chokai has been flowing since ancient times near the brewery, making it blessed with high-quality brewing water. They continue to produce sake using sake rice grown in the Shonai Plain, which boasts some of the highest quality in the country, and backed by brewing techniques that have been in place for 1875 years.

To commemorate the 150th anniversary of the founding of Seisengawa, the sake brand has released Shinyuho, a sake that has been aged for 32 years. It has a miraculously beautiful amber transparency that is hard to believe it is sake, nurtured over 32 years, and a complex yet rich aroma. The rich flavor, which is a combination of various tastes such as sweetness, sourness, bitterness, and umami, is mellow and full-bodied as an aged sake, but the long aging process gives it an exquisite finish that retains a fresh feeling. The complex intertwining of "sweetness like caramel," "bitterness like bitter chocolate," and "fruity yet spicy depth" creates a deep flavor that cannot be found in regular sake.

An elegant and calm sake: "Gunma Izumi Chotokusen Junmaishu" (Shimaoka Shuzo/Gunma Prefecture)

Since its founding in 3, the brewery has been carefully brewing sake in this area, rich in spring water from Mount Akagi, by using local sake rice and the "kimoto-style yamahai brewing" method. Kimoto-style brewing is a traditional method that has been used since ancient times to cultivate the yeast starter by skillfully utilizing the power of nature, such as the winter climate of Japan and the natural lactic acid bacteria that continue to live in the brewery. Brewers with high skills and experience take time and effort to brew, and the resulting sake has a strong, rich flavor.

"Gunma Izumi Chotokusen Junmai Sake" is made using Gunma Prefecture's Wakamizu sake rice, brewed using the Yamahai method, and aged for 2 to 3 years in the brewery. It is characterized by its elegant, calm, and gentle quality and its crisp aftertaste. "Saeki Hisho Junmaishu" (Bungo Meishu/Oita Prefecture) adds elegance to a variety of dining occasions

Founded in 43 deep in the mountains of Saiki City, Oita Prefecture. The brewery primarily produced barley shochu, but resumed sake production in 1910. They brew only pure rice sake using all locally grown rice. The brand name "Saiki Hisho" was chosen by local residents who were eager to resume sake production, with the intention of "bringing Saiki sake to the world!" By brewing using locally grown sake rice such as Yamada Nishiki, you can enjoy the different flavors and tastes of their Junmai Daiginjo, Junmai Ginjo, and Junmai sakes.

"Saeki Hisho Junmaishu" is a Junmaishu made using the traditional Kimoto method and tank pressing. The natural aroma and flavor brought about by the fermentation process of the rice adds elegance to a variety of dining occasions, regardless of the genre, be it Japanese, Western or Chinese.
