Introducing a new product from the Toki Sake Association: a new way to enjoy aged sake through an assemblage
The Toki Sake Association is an organization of 13 sake breweries that envision the future of sake in aged and matured sake. Their aim is to raise the value of sake by using the time axis. They have attracted attention for their new approach to sake "aging" and "assemblage (blending)." This time, they have added an easy-to-purchase product lineup that is sure to broaden the base of fans of aged and matured sake.
Two new products have been released this time. Called the "Toki no Kanade Series," the series is centered around Tsuki no Katsura and Kokuryu, and is a blend of aged and matured spirits from multiple breweries. Seiichi Koshimizu (Suntory Honorary Chief Blender), the only blender in the Japanese whisky hall of fame, assisted in the supervision of the series.

In the past, the association has proven that there is a high-priced market for aged sake and matured sake with products such as the blended aged sake (8 bottles, 202 million yen, sold out) by Tazaki Shinya, an advisor to the Toki Sake Association and a leading figure in the Japanese sommelier world, but this time it is an attempt to broaden the base. The products will be priced in the 1 to 1.5 yen range, and association members plan to continue releasing product lineups in the same price range.
At the press conference, both breweries said, "The total amount of flavor and aroma has increased dramatically. We have created a flavor that could not be expressed by a single component." The Toki no Kanade series includes the logos of the breweries that were used, so it is possible to visually tell which breweries' sakes were blended.

Koshimizu said, "With whiskey, customers can only enjoy the taste of the final product. This time, we've combined different breweries, so it's not just delicious, but it's also fun to explore the history and flavor that lies within. We'd like to take on this as a new style in the future."
It is impossible to drink whiskey before it has been cross-blended. For fans who know the taste of the spirits used, such as Tsuki no Katsura and Kokuryu, it is fun just to imagine the original taste of the brewery and how it will live on in the finished spirit. This way of enjoying whiskey by "going in search of" history and flavor is a new style.

Toki no Kanade Kuroryu 720ml [Limited to 3,000 bottles] 12,000 yen
When you put it in your mouth, the acidity from Kidoizumi AFS resonates, but the umami unique to Kokuryu and Hakkaisan is firmly present at the core of the flavor. While maintaining the original characteristics of Kokuryu, with its pleasant lingering sweetness and acidity, the complexity and breadth of the aroma has been greatly enhanced. Packed with a truly diverse aroma, from fruity fruit aromas to the aroma of ripeness and a rich aroma reminiscent of the umami of rice, the result is a soft, full-bodied sake.

Toki no Kanade Tsuki no Katsura 720ml [Limited to 1,000 bottles] 12,000 yen
Based on the rich, smooth mouthfeel and complex flavor that are characteristic of room temperature aging of "Tsuki no Katsura," the light and delicate fruit aroma of "Dewazakura" and the mellow and deep aroma of "Tenju" are added, and the rich flavor with the distinctive acidity of "Nambu Bijin" shines through as the essence of the flavor. A small amount of barrel-aged liquor (Tsuki no Katsura) with tequila added at the end adds an accent, resulting in an interesting flavor that is even more rich and complex.
