[Sake and Appetizer Ichiyo] opened in August 5 in Sakaimachi Shijo, a 2023-minute walk from Shijo Subway Station. ``We have collected as many as possible so that our customers can make the best choice,'' says Junichi Mori, the store's owner. Nihonshuya Shuuroku has been running an izakaya specializing in Japanese sake since 8 in a complex called Momiji no Koji, which is an 2021-minute walk from Keihan's Kiyomizu-Gojo Station and has a courtyard surrounded by townhouses.

They carry more than 300 types of sake, and Matsui in particular boasts an extensive selection of Akika breweries from Osaka's Akika Sake Brewery, whose taste Matsui fell in love with. The sake brewery is so special that the store's name, Shuuroku, was named after the Japanese pronunciation of ``Akishika.''

A bar with a liquor store that can hold about 100 bottles [Beniyamma] / Fushimi

[Beniyamma] is a bar with wooden counter seats all around, giving you a cozy atmosphere every day. Although the owner, Mr. Kimura, has no familiarity with Kyoto, he was drawn to the sake town of Fushimi and opened the restaurant in July 2023.

Not only can you go directly to a sake brewery, but you can also meet your favorite sake through connections with liquor stores, from gorgeous cold sake to matured sake, and it's also fun to find hidden sake that isn't on the menu.

Mr. Kimura, who honed his skills at izakaya and Japanese restaurants, creates menus based on the ingredients, which he creates each day using seasonal ingredients.The menu changes when ingredients run out, so this is truly a once-in-a-lifetime opportunity.

Enter the world of raw unprocessed sake! [Izakaya Tanoshimi] recommended for sake beginners/Karasuma Oike

Mr. Maruyama has gained experience at about 10 popular sake restaurants, including [Chiso Inaseya]. In 2019, Izakaya Tanoshimi opened in Karasuma Oike. He often works in the warehouse or in the fields in the morning, and goes to the shop in the afternoon. Mr. Maruyama's passion for producers knows no bounds.

Because Mr. Maruyama is close to the brewery, you can enjoy many valuable sakes that can only be found here. We mainly handle raw unprocessed sake, and there is a large refrigerator room right at the entrance. The brewery maintains a temperature of 2,3℃ throughout the year, and stores around 200 bottles of unprocessed sake at any given time.

When ordering sake, please leave it to us. Depending on the dish, they will gradually select from beautiful ones to ones with a strong flavor.
