Miyashita Sake Brewery, which has a brewery in Nishikawahara, Okayama City, took on the challenge of polishing Okayama Prefecture's sake-brewing rice, Omachi, to the utmost limit to create Junmai Daiginjo MIYASHITA ESTATE Aji.
"Omachi," which is said to be the roots of sake rice, is large-grained with a large core, and is soft and prone to cracking, so up until now the polishing rate has been limited to 40%.
This brand has been developed through years of research and development, achieving an ultra-high polishing ratio of 7%. In addition to the 400-hour polishing process, it was completed after overcoming numerous obstacles, including the use of rice washing equipment developed to handle extremely small rice grains, and delicate koji making.
Its light, never-boring flavor is almost completely free of impurities, and it blends beautifully with the rich, natural umami of Omachi.

Hirata Sake Brewery is committed to small-batch, handmade brewing with the motto "sake is something that is brewed and nurtured." "SUIO," brewed in Hida Takayama in 1994, is a gem of a matured sake that has finally been released to the world.
Brewed using traditional methods using Gifu-grown sake rice "Hida Minori" and Hida underground water. Matured for a long time in enamel tanks lined up at the back of the brewery, the amber-colored sake has a strong, complex aroma reminiscent of caramel, spices, dried shiitake mushrooms, honey, and more. When you put it in your mouth, a smooth flavor with a harmonious balance of sweetness and umami spreads, and the well-balanced acidity and bitterness create a deep aftertaste.
The taste of this sake was also awarded the title of "Champion Sake" in the Japanese Sake category at the 2014 International Wine Challenge (IWC).
The unique bottle design expresses the never-ending journey of aged sake, with a triangle symbolizing rebirth and growth, a circle with one side missing, representing imperfect perfection, and a paper streamer on the seal, representing a barrier.

Tanabe Sake Brewery in Eiheiji Town, Fukui Prefecture, has its brewery in Matsuoka, a district known as one of the leading sake-producing areas in the prefecture. While continuing to carry on the traditional sake-making techniques that spare no effort, the brewery is always taking on new challenges.
Among the high-priced sakes produced by Tanabe Shuzo, the one that stands out the most is "Eternal Radiance." This special limited edition premium sake was created after much trial and error to pay tribute to the 96-year reign of Queen Elizabeth II, who passed away at the age of 70. It is the third-highest priced sake (as of August 3) among the sakes exhibited at SAKE World NFT.
The mash, made from the luxurious "Yamada Nishiki" premium rice from Hyogo Prefecture, is fermented at low temperatures for a long period of time, pressed slowly over time using a vat, and then aged at low temperatures to bring out the exquisite flavor.
Another attraction is the label, which was created by the world-renowned artist Hiroshi Senju. The label features a selection of the latest works from his representative "Taki Series," and the inscription "Eternal Brilliance" written by Senju, giving this sake a special shine. Only 210 bottles will be produced. The label on the art bottle is a rare gem, with Senju's signature and edition number.

Located in Imasho-juku on the Hokuriku Kaido in Fukui Prefecture, Kitazen Shoten's history of sake brewing dates back to the Edo period.
Known for its heavy snowfall, this region is blessed with pure, soft water that filters through the silica bedrock of the mountains, and for over 300 years has been brewing the prefecture's best sake made with this soft water. With the motto "local sake is brewed by the climate," the sake carefully brewed in the gassho-style warehouse has a flavor that is loved not only by locals, but also by travelers who once traveled along the Hokkoku Kaido road.
Their representative brand is "Hijiri no Miyo." The name was given to them by a high priest in Kyoto, and it means "praying for world peace from a village of pure water." Brewed with Yamada Nishiki, the king of sake rice, and soft water with a pH of 7 that is close to pure water, which is ideal for brewing ginjo sake, this sake has the characteristic refreshing and clean taste that is unique to Kitazen Shoten.
Among them, "Seino Miyo Long Aged Daiginjo Sake" is a masterpiece that has been fully aged by storing "Seino Miyo" in a bottle in an underground cellar for 1994 years, which won the gold medal at the Kanazawa Regional Taxation Bureau Liquor Appraisal in 30. Shiraki Kosuke Shoten, the brewer of Daruma Masamune, has its brewery in Kadoyamon, a rural area in the north of Gifu City. Since the 1960s, they have been working on long-term aging of sake, and have made a name for themselves as pioneers of aged sake (long-term aged sake). Their passion and tireless efforts in aged sake have established the reputation that "Daruma Masamune is synonymous with aged sake," and they have been highly praised both in Japan and overseas.
Now, after more than half a century of quietly sleeping deep within the brewery, Daruma Masamune is finally being released to the world. Daruma Masamune 2024 Brewed Sake (with brewing year certificate) is a true treasure, having fetched the highest price (as of August 8) among all the SAKE World NFT offerings.
