About the store

My Sake World Oike Bettei is an experience facility where you can customize your own sake. It aims to broaden the ways to enjoy sake through the "blending" method.

The shop, a renovated old house, is a completely private space limited to four people, where you can actually sample 4 types of sake while learning about the history, culture, and spirituality of sake. For example, you can get a deeper experience of the characteristics of sake, such as the umami of Junmai sake and the unique aroma of Ginjo sake.

The biggest feature of this facility is that you can create your own one-of-a-kind "original blended sake (my sake)." You can blend a variety of sakes, such as daiginjo, junmai, and aged sake, to your liking, and save the original recipe of the completed flavor as an NFT.

In the future, you could order your own sake based on the saved recipe, or use it as a gift or memento for a special occasion!On the WebYou can also have fun in a new way by selling your recipes and making money.

Step 0: Learn about sake
Our expert staff will explain the basics of sake in an easy-to-understand manner.

Step 1: Tasting of 12 types of sake
You will taste 12 different types of sake and discover their unique characteristics.

Step 2: Choose your favorite sake
Choose your favorite sake as your primary sake, and your next two favorite sakes as your secondary sakes. *If you are knowledgeable about sake, you can choose three or four types of secondary sake.

Step 3: Try out your first blend
You will create a 40ml blend using the spirits of your choice and then sample it.

Step 4: Adjust the ratio and re-produce
Based on the tasting results, we make a second 2ml batch by slightly adjusting the ratio and taste it again.
(You can even make a completely different flavor!)

Step 5: Decide on the recipe and label for your "My Sake"
Based on the taste of the two trial batches, the recipe and the name of the sake will be written down, and your one-of-a-kind original blended sake, "My Sake," will be delivered to your specified address at a later date!

FAQ

Q: What about blending sake?
A: You may not be familiar with the term "blended sake" when it comes to sake. In fact, the expression "goushu" was already recorded in the Edo period "Accounting Book from 3 (Kyoho 1718)" that is still in existence at Gekkeikan, and since the Showa period, blending sake has been practiced to improve flavor. Currently, the sake production process includes a stage called "blending," which is an important process in which the sake produced in each tank is blended to stabilize the flavor. It is not uncommon for sake breweries to employ blenders. Blending can expand the range of flavors of sake infinitely, so please try it out and experience its possibilities.

By the way, in the world of wine, "assemblage" is a traditional technique with over 150 years of history, and blending is also an established part of the manufacturing process for whiskey, white spirit, etc. Sake blending also has a similarly profound charm.

Q: Is it okay to make completely different flavors using completely different alcohol for the first and second prototypes?
A: Of course. We will make two prototypes. You can make minor adjustments to the first one, or create a completely different type of flavor for the second one. Please feel free to use your imagination.

Q: You explained that it is a blend of three types of alcohol, but isn't it not okay to use more than four types?
A: It is possible to use more than four types of sake. However, the more types of sake used, the more difficult it becomes to control the taste, so this is recommended for experienced people.

Q: What is the best way to store blended sake?
It is fine to store it in a cool, dark place at room temperature, but we recommend storing it in the refrigerator.

During the pre-opening blending experience that began on November 11th, we received the following honest feedback from participants:

・I made two prototypes, and it was very interesting to see how the taste changed completely just by changing the amounts of the two ingredients.
・It was fun to compare the drinks made by my friends and the person next to me.
・I did it so well that I thought I was a genius.

・I used measuring cylinders and flasks for the first time since I was in junior high school. It was fun.
・I wondered how it would turn out, but it turned out delicious!

As a result of the survey, we also received the following comments from participants:

・Thank you for giving me a wonderful experience. It was much more fun than I expected. I felt like I got a good deal from being able to learn about alcohol and sample a variety of different types.
・I felt like I was able to see a new side of sake through this blend. I'm looking forward to this initiative being able to reach a wider range of people!
・It's a wonderful space and I'd like to rent it out exclusively for four people and use it with friends.
・I was able to gain a deeper knowledge of sake, communicate with the other customers, and have the experience of making something with my own hands.
・The explanations were easy to understand and the experience of making my own original sake was a lot of fun! The atmosphere of the store was also nice and luxurious with a Japanese feel.


The results of the survey of participants showed that 66.1% were "very satisfied" with the experience, while 32.1% were "satisfied." 98.2% were "very satisfied/satisfied"! When asked about what they were satisfied with, many said "it was good that I was able to experience blending" (73.9%), "learning about sake and the explanation was good" (15.2%), etc. Everyone also seemed satisfied with the sake they blended, saying it was "delicious" (45.7%) or "very delicious" (50%).

Our thoughts

My Sake World Oike Bettei was born from the desire to spread the appeal of Japanese sake to as many people as possible.

The connections with local sake breweries that were cultivated during my time at the publishing company Leaf, which published an information magazine about Kyoto and Shiga, blossomed into "Sake World." Through this, I was able to expand my connections with sake breweries across the country by operating "Sake World NFT," an e-commerce site that turned sake into NFTs.

In addition, through the development and sale of our original sake brand "Assemblage Club," we have also worked on creating original brands for restaurants. In particular, our blended sake "Assemblage Club 01 CODENAME: Taro'" has received high praise overseas. Our driving force is our desire to experience the fun, deliciousness, and hidden possibilities of blending sake, and to share the joy of "making your own, one-of-a-kind sake" with sake fans.

We want sake lovers, as well as those new to sake and tourists who want to experience Japanese culture through sake, to learn more about the appeal of sake. We also hope that this place will be a catalyst for expanding the circle of sake fans.
