Junmai Ginjo sake that has been passed down through history "490th Anniversary Special Project Hokkoku Kaido Junmai Ginjo (Yamaji Shuzo / Shiga Prefecture)"
Located in the old Kinomoto-juku area of Nagahama City, Shiga Prefecture, Yamaji Sake Brewery was founded in 1532 and is said to be the oldest company in Shiga Prefecture. It began two years before Oda Nobunaga was born and has a history of about 2 years. Their main brand, Hokkoku Kaido, uses sake rice grown locally in Shiga Prefecture, such as Tamae and Yamada Nishiki, with reduced or no pesticides. The brewing water used is natural spring water from within the brewery, and the craftsmanship of the Noto Toji and the cold climate of Kinomoto create a deep flavor.
The Junmai Ginjo sake made to commemorate the 490th anniversary features a label in the Hakushu style of calligraphy that has been passed down since the Edo period. This sake, made from Omi Yamadanishiki rice polished to 60%, is crisp and dry, making it the perfect drink to accompany a meal.

Yamaji Sake Brewery began brewing sake using mulberry leaves when silkworm farming was popular at the time, and even today, they are the only brewer in Japan that produces "mulberry sake." Using glutinous rice from Omi and mulberry leaves from farms in the prefecture as ingredients, they create their sake using a unique method that adds mulberry leaf extract to traditional mirin and shochu. The sake is also known as a favorite of the literary master Shimazaki Toson, and a handwritten letter from him can be found at the brewery. The traditional taste has been preserved using the same brewing methods since the brewery's founding, transcending time.
Mulberry liquor, which is sweet like plum wine made by steeping plenty of mulberry leaves, is characterized by its natural sweetness. It does not use sugar or sweeteners, but achieves a gentle sweetness through the saccharification of glutinous rice and koji. It can be enjoyed on its own, or mixed with citrus fruits and soda.

Tentaka Sake Brewery, located at the southern end of the Nasu Highlands, is a sake brewery that has been making sake in Otawara City, Tochigi Prefecture, a city that has long been a major rice farming area.
