With conventional freezing, sake brewers have not had a culture of freezing sake because of the significant deterioration of taste due to the separation of water and alcohol, and damage to bottles due to water expansion. Achieved frozen storage that allows you to enjoy the flavor as is.
"Horimin Namazake", which allows you to enjoy freshly squeezed sake without going to the brewery, will be on sale in advance on the "TOMIN FROZEN" EC site from Friday, May 2023, 5, and will also be sold at stores in Yokohama and Nakamachidai from the next day. Event Report
Prior to this time, I participated in the "TOMIN FROZEN" tasting event held on May 5th.Together with Nanbu Bijin President Kuji and participating breweries, we will be spreading the word about the appeal and possibilities of frozen namazake.
Brands from participating sake breweries lined up in a row.
A talk session between Southern beauty President Kuji and freelance announcer Yuki Aoi.
When he previously tried frozen sashimi using ``freezing'', he realized that there was no difference in taste between fresh and frozen sashimi, so he decided to flash-freeze the sake.I tried it experimentally and found no negative taste.Sake is said to be at its most delicious, the moment it is squeezed in the brewery, and if you flash freeze it, you can enjoy the fresh taste forever.
"Leave the quality as it is semi-permanently in the future"Started with the aim of
Why do you freeze raw sake using “freezing”?
Sake is fermented using the power of ``Aspergillus Aspergillus,'' and the main ingredients are rice and water, so freshly squeezed raw sake has a fruity and fresh taste. It has many fans because of its fresh taste, but since it is difficult to maintain the freshness of unpasteurized sake, it is a valuable sake that can only be enjoyed by going to the brewery.
However, because fermentation of raw sake proceeds very quickly due to the power of koji mold, the flavor is susceptible to change. Therefore, to prevent fermentation from progressing unnecessarily by Aspergillus oryzae, a heat treatment called ``hiring'' is usually applied when distributing the product. This makes it easier to stabilize the taste of the alcohol and allows it to be stored for a long time.
Freezing is the best way to preserve the deliciousness of this precious raw sake. However, when frozen normally, the main problems were that the alcohol expanded, causing the bottle to break, and that the taste and quality deteriorated.
However, with cryo-sleep, the freezing time that normally takes about 4 hours can be quickly frozen in about 20 minutes, so the expansion rate is extremely low and the bottle will not break. In addition, because there is very little separation of water and alcohol, you can enjoy the same flavor as before freezing even after thawing.
With this technology, it is now possible to freeze raw sake, which had previously been difficult to maintain its freshness, to retain its freshly-squeezed taste in the brewery.
The charm of frozen raw sake
Even though it is raw sake, it is shipped from the brewery and can be tasted at stores or at home after two weeks at the earliest, but in reality it takes one to two months before you can enjoy sake that has been squeezed in the brewery for 2 days. Because we freeze that moment of deliciousness, the taste does not change or deteriorate, and you can experience the pure, freshly squeezed flavor all over the world.
It is also suitable for those who prefer sake that has been aged for a while, and can be thawed and enjoyed at a time of their own choosing. You can't go back in time, but you can move forward.
According to President Kuji, it is best paired with raw ingredients such as raw whitebait and raw oysters.Raw sake for raw sake.
After repeated various certifications and tests, it was found that the taste remains almost the same, and it has been endorsed by numerous experts and sake enthusiasts. Also, as ``sake that stands still in time,'' sake breweries can preserve it as an archive for 50 or 100 years.
36 brands of raw sake are frozen and sold frozen.
I decided to have a tasting soon. The overall taste is smooth, with a rich aroma.
Enjoy a long aftertaste with refreshing acidity.
The future of sake aimed at by Kyoumin Namazake
When preserving high-value-added sake, especially raw sake, by storing it frozen using ``freedom'', you can now enjoy raw sake that can only be tasted in early spring at stores or at home.In particular, with raw sake, which is difficult to maintain freshness, deterioration in quality has been an issue when expanding overseas, but by ``freezing'' it is now possible to export the sake with the same quality as freshly squeezed from a Japanese brewery.Transport time can be reduced to 0 days.
Currently, in order to equalize export costs, it is necessary to export all at once, which puts a heavy burden on a single brewer from the perspective of logistics volume, but if multiple brewers can export together, it will be possible to expand overseas. As a result, it will also contribute to the creation of export opportunities for the sake industry as a whole.
In addition, aged sake can also be frozen to the best degree of aging, so in the future, we will be able to freeze sake other than raw sake as well, so that we can preserve the brewer's thoughts and stories. We can have fun together.
At the end, he strongly stated, ``We will compete with the world with 'fresh' draft sake from each brewery. 'Flash freezing' will be the catalyst for the next generation.''By stopping time and reducing distance to zero, we aim to create new demand for sake by sharing technology that allows us to transport goods throughout Japan and around the world.
