The best temperature for storing sake is -5℃
Generally, sake is stored refrigerated, with a standard temperature of around 5 to 10°C for unpasteurized and ginjo sake. However, this is only for a few months (unless you are intentionally aging it!). Coupled with the recent trend of more and more fruity and delicately flavored sake, it is said that the best temperature for long-term storage while maintaining the quality of the sake is below 0°C, especially -5°C. Some particular sake breweries even stick to a policy of only selling to authorized dealers with storage facilities that can maintain a temperature of -5°C.
This kind of sake is suitable for aging below freezing
Molecular activity slows down in environments below 0℃, and sake matures much more slowly than at room temperature or in the refrigerator. As a result, even after several years, sake retains the freshness of new sake and a mellow flavor with a good balance of umami, sweetness, and acidity.
Daiginjo and ginjo sakes are especially suited to aging at below freezing points. They retain their characteristic gorgeous aroma and develop a deep flavor that comes with aging. We also recommend storing rich types of sake such as kimoto, as you can enjoy a gentle aging sensation while preventing the flavor from deteriorating.
Long-term below-freezing aging increases its value
Recently, a sake that had been aged for over 10 years at -5°C was released for over 15 yen, which caused a stir, and interest in aging at temperatures below freezing has been on the rise. However, it is difficult to maintain the temperature of -5°C, which is ideal for sake, in a home refrigerator, and although there are specialized sake cellars on the market, they are quite expensive and out of reach for most individuals.
